2 tablespoons unsalted butter
3 cloves fresh garlic, minced
2 tablespoons all-purpose flour
1 cup whole milk, warmed
1/2 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for topping
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Pinch of nutmeg (optional)
Instructions
Melt the butter in a small saucepan over medium heat.
Add the minced fresh garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
Whisk in the flour and cook for 1 minute, stirring constantly to create a roux.
Slowly pour in the warm milk while whisking continuously to prevent lumps.
Continue to cook, stirring often, until the sauce thickens enough to coat the back of a spoon, about 3 to 5 minutes.
Reduce the heat to low. Stir in the heavy cream, Parmesan cheese, salt, pepper, garlic powder, and nutmeg, if using.
Stir until the cheese is fully melted and the sauce is smooth and creamy. Do not let the sauce boil after adding the cream and cheese.
Remove from heat. This is your perfect garlic white pizza sauce base. Use immediately on your pizza dough.
Notes
For an even richer flavor, use roasted garlic instead of fresh minced garlic.
