Make this BLT Chicken Salad to combine the classic flavors of bacon, lettuce, and tomato with tender chicken. This recipe uses a light avocado dressing for a creamy texture, making it a perfect high protein lunch or meal prep option.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 6 slices bacon, cooked crispy and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup celery, finely diced
  • 1/2 cup red onion, finely diced
  • 4 cups chopped romaine lettuce
  • For the Dressing:
  • 1 ripe avocado
  • 1/4 cup plain Greek yogurt (or use mayonnaise for a richer taste)
  • 2 tablespoons fresh lime juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Prepare the bacon: Cook the bacon until crisp. Drain on paper towels and crumble once cooled.
  2. Prepare the chicken: If you do not have pre-cooked chicken, cook chicken breasts and shred them. Allow the chicken to cool slightly.
  3. Make the dressing: Combine the avocado, Greek yogurt, lime juice, and Dijon mustard in a food processor or blender. Blend until completely smooth and creamy. Season with salt and pepper.
  4. Combine salad base: In a large bowl, mix the shredded chicken, crumbled bacon, halved tomatoes, diced celery, and diced red onion.
  5. Dress the salad: Pour the avocado dressing over the chicken mixture. Toss gently until all ingredients are evenly coated.
  6. Chill: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to blend. This step is key for meal prep.
  7. Serve: Just before serving, gently fold in the chopped romaine lettuce. Serve immediately over greens, in lettuce wraps, or on whole-grain toast for a satisfying lunch.

Notes

  • For a low carb or keto BLT chicken salad, skip the toast and serve this mixture in crisp butter lettuce cups or over a bed of mixed greens.
  • If you prefer a tangier flavor, substitute half of the Greek yogurt in the dressing with sour cream.
  • This chicken salad keeps well for meal prep for up to 3 days when stored without the lettuce. Add the lettuce just before eating.
