Create these irresistible Caramel Ritz Cracker Christmas Cookies for a festive treat that balances salty crunch with gooey caramel and chocolate. They are simple to make and perfect for holiday cookie exchanges.

Ingredients

  • 48 Ritz crackers
  • 24 soft caramel candies, unwrapped
  • 2 tablespoons heavy cream or milk
  • 1½ cups milk chocolate or semi-sweet chocolate chips
  • Holiday sprinkles, crushed candy canes, or sea salt for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Arrange the Ritz crackers in a single layer on the prepared baking sheet.
  3. Place one unwrapped caramel candy on top of each cracker.
  4. Bake for 4 to 5 minutes, or just until the caramel softens and melts slightly. Watch carefully to prevent burning.
  5. Remove the sheet from the oven. Immediately press a second Ritz cracker on top of each melted caramel to create a sandwich.
  6. Return the cracker sandwiches to the oven for 1 to 2 more minutes, just until the caramel oozes slightly from the sides.
  7. Remove from the oven and let them cool on the baking sheet for about 5 minutes until the caramel sets slightly.
  8. While the cookies cool, melt the chocolate chips. You can do this using a double boiler or in the microwave in 30-second intervals, stirring between each interval until smooth.
  9. Drizzle the melted chocolate over the cracker sandwiches.
  10. If using, immediately sprinkle with sea salt, crushed candy canes, or holiday sprinkles before the chocolate sets.
  11. Allow the chocolate to set completely before serving or storing. This makes a great make ahead Christmas sweet.

Notes

  • For an even richer flavor, substitute milk chocolate with dark chocolate chips.
  • If you prefer a thicker chocolate layer, melt the chocolate and spread it over the crackers instead of drizzling.
  • These are excellent for cookie exchange favorites and travel well for homemade holiday gifts.
