You can make a creamy, cheesy dip that satisfies cravings and boosts your protein intake. This recipe uses cottage cheese blended smooth to create a healthy cheese dip alternative, ready in five minutes.

Ingredients

  • 1 cup cottage cheese (2% or 4% fat recommended)
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup Rotel (diced tomatoes and green chilies, undrained)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Pinch of salt

Instructions

  1. Place the cottage cheese, shredded cheddar cheese, Rotel (with liquid), cumin, and garlic powder into a high-speed blender.
  2. Blend on high speed until the mixture is completely smooth and creamy, stopping to scrape down the sides if necessary. This usually takes 30 to 60 seconds.
  3. Transfer the blended mixture to a microwave-safe bowl.
  4. Microwave on high for 60 to 90 seconds, stirring halfway through, until the queso is hot and the cheese is fully melted and incorporated.
  5. Taste the dip and add a pinch of salt if needed.
  6. Serve immediately with tortilla chips, fresh vegetables, or as a low-guilt nacho topping.

Notes

  • For a spicier queso, add 1/4 cup of pickled jalapeño slices (drained) to the blender.
  • If you prefer a thinner consistency, add one tablespoon of milk or water at a time while blending until you reach your desired texture.
