You can make this light and fluffy Orange Creamsicle Cake that captures the nostalgic flavor of the classic frozen treat. This recipe uses simple ingredients to create a moist citrus cake with a creamy vanilla frosting, perfect for summer gatherings or family desserts.

  • 1 cup cold water
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup cold orange juice
  • 1 teaspoon orange zest
  • 1 container (8 ounces) frozen whipped topping, thawed

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the cake mix, cold water, vegetable oil, and eggs. Beat with an electric mixer on medium speed for two minutes until smooth.
  3. Divide the batter evenly between the prepared cake pans. Bake for 28 to 32 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  5. While the cakes cool, prepare the frosting. In a medium bowl, whisk together the instant vanilla pudding mix, cold milk, and vanilla extract until slightly thickened, about two minutes.
  6. In a separate bowl, beat the granulated sugar, orange juice, and orange zest together until the sugar dissolves.
  7. Gently fold the orange juice mixture into the pudding mixture. Then, fold in the thawed whipped topping until just combined, creating your creamy vanilla frosting.
  8. Once the cakes are completely cool, place one layer on a serving plate. Spread about one-third of the frosting evenly over the first layer.
  9. Top with the second cake layer. Frost the top and sides of the entire cake with the remaining creamsicle frosting.
  10. Chill the cake for at least one hour before slicing and serving for the best texture.
