  • 1 pound spaghetti or linguine
  • 4 cups chicken or vegetable broth
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (optional garnish)

Instructions

  1. Place the pasta, broth, minced garlic, salt, and pepper into a large, deep skillet or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to medium-low and simmer, stirring frequently to prevent sticking, until the pasta is cooked through and most of the liquid has been absorbed, about 12 to 15 minutes.
  4. Remove the skillet from the heat. Stir in the heavy cream and butter until the butter melts completely.
  5. Gradually stir in the grated Parmesan cheese until the sauce is smooth and creamy. If the sauce seems too thick, add a splash of hot water or extra broth until you reach your desired consistency.
  6. Taste and adjust salt and pepper if needed.
  7. Serve immediately, garnished with extra Parmesan cheese and fresh parsley.

  • For a richer flavor, use reserved pasta water instead of plain water if the sauce becomes too thick during the final steps.
