1 (8 ounce) wheel brie cheese, cold
1 sheet frozen puff pastry, thawed
1/4 cup fig jam
1 teaspoon fresh rosemary, finely chopped
1 egg, beaten (for egg wash)
Crackers or sliced baguette, for serving
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
Place the cold brie wheel in the center of the thawed puff pastry sheet.
Brush the edges of the pastry lightly with the beaten egg wash.
Fold the pastry up and over the brie, sealing the edges tightly to fully enclose the cheese. Trim any excess pastry. Place the wrapped brie, seam-side down, onto the prepared baking sheet.
Brush the entire surface of the pastry package with the remaining egg wash.
Bake for 20 to 25 minutes, or until the pastry is golden brown and puffed.
