Create this simple, creamy ricotta dip that whips up fast. Topped with hot honey and crunchy pistachios, this no-bake appetizer is perfect for entertaining and impressing guests.

Ingredients

Scale
  • 15 ounces whole milk ricotta cheese, drained if very wet
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup hot honey, plus more for drizzling
  • 1/4 cup shelled pistachios, roughly chopped
  • Crusty bread, crostini, or crackers, for serving

Instructions

  1. Place the drained ricotta cheese, 2 tablespoons of olive oil, lemon juice, salt, and pepper into the bowl of a food processor.
  2. Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth, light, and airy.
  3. Transfer the whipped ricotta dip to a shallow serving bowl.
  4. Drizzle the top evenly with the 1/4 cup of hot honey.
  5. Sprinkle the chopped pistachios over the honey.
  6. Drizzle a small amount of extra olive oil over the dip just before serving.
  7. Serve immediately with your choice of bread or crackers for dipping.

Notes

  • If you do not have a food processor, you can use a hand mixer or stand mixer fitted with the whisk attachment. Beat the ingredients on medium-high speed until smooth, about 3 to 4 minutes.
  • For a savory variation, skip the hot honey and top the dip with roasted garlic, fresh herbs like thyme or rosemary, and a drizzle of good quality olive oil.
  • Drain excess liquid from the ricotta for at least 15 minutes using a fine-mesh sieve lined with cheesecloth to achieve the best creamy texture.
