  • 1 small yellow onion, finely chopped

  • 1/2 cup sun-dried tomatoes packed in oil, drained and roughly chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Pat the chicken breasts dry and season both sides with salt and pepper.
  2. Heat the olive oil and butter in a large, oven-safe skillet over medium-high heat.
  3. Sear the chicken breasts for 4 to 5 minutes per side until golden brown. Remove the chicken from the skillet and set it aside on a plate.
  4. Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
  6. Stir in the chopped sun-dried tomatoes, heavy cream, and Italian seasoning. Bring the sauce to a gentle simmer.
  7. Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and slightly thickened. Taste the sauce and adjust salt and pepper if needed.
  8. Return the seared chicken breasts to the skillet, nestling them into the sauce.
  9. Cover the skillet and let it simmer on low heat for 8 to 10 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and is cooked through.
  10. Garnish with fresh basil or parsley before serving. Serve this creamy chicken recipe over pasta, rice, or with crusty bread.
