Make these simple, crispy Mediterranean Spinach and Feta Cheese Crisps. This recipe uses accessible ingredients to create a satisfying, savory snack or appetizer perfect for entertaining.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, finely chopped
  • 4 ounces feta cheese, crumbled
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon black pepper
  • 1 large egg white, lightly beaten
  • Pinch of salt (optional, as feta is salty)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the finely chopped spinach, crumbled feta cheese, flour, dried oregano, and black pepper. Mix these dry ingredients together first.
  3. Add the lightly beaten egg white to the mixture. Use your hands or a fork to mix until a cohesive dough forms. Do not overmix.
  4. Take small spoonfuls of the mixture (about 1 teaspoon each) and place them onto the prepared baking sheet.
  5. Gently flatten each mound slightly with the back of a spoon to form a thin crisp shape, about 1.5 inches wide.
  6. Bake for 12 to 15 minutes, or until the edges are golden brown and the crisps are firm and set.
  7. Remove from the oven and let the crisps cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. They will crisp up as they cool.

Notes

  • For extra flavor, you can add 1/2 teaspoon of fresh lemon zest to the mixture.
  • If you prefer a lower-carb option, substitute the all-purpose flour with almond flour. Adjust baking time slightly if needed.
  • These make excellent Mediterranean finger foods for parties.
