One-Pot Cheesy Smoked Sausage and Rice Skillet

You can make this hearty, comforting sausage and rice dish in a single skillet. It uses simple ingredients and cuts down on cleanup time, making it perfect for busy weeknights.

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into rounds
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning (or to taste)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas and carrots mix
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  2. Add the sliced smoked sausage to the skillet and cook until the edges are lightly browned, about 4 to 5 minutes. Remove the sausage with a slotted spoon and set it aside, leaving any rendered fat in the skillet.
  3. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the uncooked rice, Cajun seasoning, oregano, and pepper. Cook for 1 minute, stirring constantly to coat the rice grains.
  5. Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover the skillet tightly, and simmer for 15 minutes without lifting the lid.
  6. Remove the skillet from the heat and let it stand, covered, for 5 minutes. Do not remove the lid during this resting time.
  7. Uncover the skillet. Stir in the reserved smoked sausage and the frozen peas and carrots mix. The residual heat will warm the vegetables.
  8. Sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet again for 2 to 3 minutes, or until the cheese is fully melted and creamy.
  9. Stir everything together gently before serving your easy sausage and rice skillet dinner.

Notes

  • For a spicier dish, increase the Cajun seasoning or add a pinch of cayenne pepper with the other seasonings.
  • If you do not have smoked sausage, you can substitute it with ground sausage; brown it first and drain excess grease before proceeding with the onions.
  • This recipe works well with brown rice, but you must increase the simmering time to about 40 minutes and add extra broth as needed.
