One-Pot Cheesy Taco Pasta Skillet

You can make this satisfying, family-friendly dinner using just one pot. This recipe combines the bold flavors of tacos with creamy pasta for an easy weeknight meal with minimal cleanup.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 3 cups water
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (15 ounce) can tomato sauce
  • 8 ounces elbow macaroni or small shell pasta
  • 1 cup milk
  • 2 cups shredded cheddar or Mexican blend cheese

Instructions

  1. Brown the ground beef and chopped onion in a large, deep skillet or pot over medium heat. Drain off any excess grease.
  2. Stir in the taco seasoning mix. Cook for 1 minute until fragrant.
  3. Pour in the water, diced tomatoes and green chilies (with liquid), and tomato sauce. Bring the mixture to a boil.
  4. Add the dry pasta to the skillet. Stir well to combine and submerge the pasta.
  5. Reduce the heat to medium-low, cover the skillet, and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is tender and most of the liquid is absorbed.
  6. Remove the skillet from the heat. Stir in the milk until combined.
  7. Sprinkle the shredded cheese over the top of the pasta mixture. Cover the skillet again and let it stand for 5 minutes, or until the cheese is fully melted and creamy.
  8. Stir gently to incorporate the melted cheese, creating a creamy texture. Serve immediately.

Notes

  • For extra flavor, use a homemade taco seasoning blend instead of a packet.
  • If the pasta seems too thick before adding the cheese, add a splash more milk or water until you reach your desired consistency.
  • Top individual servings with sour cream, chopped cilantro, or crushed tortilla chips for added texture.
