Make this flavorful Thai Pineapple Fried Rice at home. It balances sweet pineapple with savory sauce and comes together quickly, making it a perfect weeknight Asian dinner.

  • 2 cups cooked, cold jasmine rice (day-old rice works best)
  • 1 tablespoon vegetable oil
  • 1/2 cup diced fresh pineapple
  • 1/2 cup protein (cubed chicken, peeled shrimp, or firm tofu cubes)
  • 1/2 cup mixed vegetables (peas, carrots, diced bell pepper)
  • 2 cloves garlic, minced
  • 1 small shallot, thinly sliced
  • 1 large egg, lightly beaten
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon curry powder
  • 1 teaspoon sugar
  • 1/4 cup cashews, toasted (optional)
  • 2 green onions, sliced for garnish
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare your protein: If using chicken or shrimp, cook it in a separate pan until done, then set aside. If using tofu, press it well before cubing.
  2. Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and sliced shallots. Stir fry for 30 seconds until fragrant.
  3. Add the protein (if not pre-cooked) and mixed vegetables to the wok. Stir fry for 2-3 minutes until the vegetables start to soften.
  4. Push the ingredients to one side of the wok. Pour the beaten egg into the empty space and quickly scramble until just set. Mix the egg into the other ingredients.
  5. Add the cold rice to the wok. Break up any clumps with your spatula. Stir fry for 3-4 minutes until the rice is heated through.
  6. Add the diced pineapple, fish sauce, soy sauce, curry powder, and sugar. Toss everything together quickly, ensuring the rice is evenly coated with the sauce. Cook for another 1-2 minutes.
  7. Stir in the toasted cashews, if using. Taste and adjust seasoning if needed.
  8. Serve immediately. For presentation, transfer the fried rice into a hollowed-out pineapple half (fried rice in pineapple bowl style). Garnish with sliced green onions and cilantro.

Notes

  • Use cold, day-old rice for the best texture; fresh, warm rice will become mushy when stir-fried.
  • For a vegetarian or vegan version, substitute the fish sauce with extra soy sauce or vegan fish sauce, and use tofu or cashews as the main protein.
  • To achieve an authentic Thai flavor, ensure you use a small amount of curry powder in the sauce base.
  • If you want a spicier dish, add a pinch of red pepper flakes with the garlic.
