Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni slices

Instructions

  1. Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
  3. In a separate bowl, whisk together the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the mozzarella cheese and half of the pepperoni slices into the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Top each muffin with a small spoonful of pizza sauce and a few remaining pepperoni slices.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the mini pizza muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These cheesy pizza cupcakes freeze well. Cool them completely, then place them in a freezer-safe bag for up to one month. Thaw overnight or reheat from frozen at 350 degrees F for about 15 minutes.
  • If you do not have mini pepperoni, you can chop regular pepperoni into small pieces.
  • For extra flavor, brush the tops with a little melted butter mixed with a pinch of garlic powder right after they come out of the oven.
