1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1 cup milk
1/4 cup vegetable oil
1 large egg
1 cup shredded mozzarella cheese
1/2 cup pizza sauce
1/2 cup mini pepperoni slices
Instructions
Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking powder, salt, oregano, and garlic powder.
In a separate bowl, whisk together the milk, vegetable oil, and egg until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
Gently fold in the mozzarella cheese and half of the pepperoni slices into the batter.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Top each muffin with a small spoonful of pizza sauce and a few remaining pepperoni slices.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the mini pizza muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
These cheesy pizza cupcakes freeze well. Cool them completely, then place them in a freezer-safe bag for up to one month. Thaw overnight or reheat from frozen at 350 degrees F for about 15 minutes.
If you do not have mini pepperoni, you can chop regular pepperoni into small pieces.
For extra flavor, brush the tops with a little melted butter mixed with a pinch of garlic powder right after they come out of the oven.
