  • 1.5 lbs ground turkey
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can pumpkin puree (not pumpkin pie filling)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper to taste

Instructions

  1. Place the ground turkey, black beans, kidney beans, pumpkin puree, diced tomatoes, green chilies, onion, and bell pepper into your slow cooker insert.
  2. Add the minced garlic, chicken broth, chili powder, cumin, oregano, smoked paprika, and cayenne pepper, if using.
  3. Stir all ingredients together until they are well combined.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  5. About 30 minutes before serving, taste the chili and add salt and black pepper as needed.
  6. Serve hot with your favorite toppings.

Notes

  • For a thicker chili, remove the lid during the last 30 minutes of cooking time to allow some liquid to evaporate.

  • If you prefer a different protein, substitute ground chicken or lean ground beef for the turkey.
