  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper (optional, for a kick)

Instructions

  1. Melt the butter in a small saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Gradually whisk in the milk until the mixture is smooth and begins to thicken slightly.
  4. Reduce the heat to low. Add the shredded cheddar cheese, salt, and cayenne pepper (if using).
  5. Stir continuously until the cheese is completely melted and the sauce is smooth and velvety. Do not let it boil.
