  • 2 celery stalks, sliced
  • 3 cloves garlic, minced

  • 1/4 teaspoon red pepper flakes (adjust for spice level)
  • 6 cups homemade chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup shredded cooked chicken breast
  • 1/2 cup ditalini pasta
  • 1/2 cup chopped fresh spinach
  • Salt and black pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Add the minced garlic, oregano, basil, and red pepper flakes. Cook for 1 minute until fragrant.
  3. Pour in the chicken broth and add the diced tomatoes with their juice. Bring the mixture to a boil.
  4. Add the ditalini pasta. Cook according to package directions, usually about 8 to 10 minutes, until the pasta is tender.
  5. Stir in the shredded cooked chicken and the fresh spinach. Cook just until the chicken is heated through and the spinach wilts, about 2 minutes.
  6. Taste the soup and add salt and black pepper as needed.
  7. Ladle the soup into bowls and top each serving with grated Parmesan cheese before you serve it.
