1 pound ground turkey
1 medium onion, chopped
2 cups sweet potatoes, peeled and diced into 1/2-inch pieces
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn
1 packet (1 ounce) taco seasoning mix
1/2 cup water
1 cup shredded cheddar or mozzarella cheese
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and chopped onion. Cook, breaking up the meat, until the turkey is browned and the onion is soft, about 5 to 7 minutes. Drain any excess grease from the skillet.
Add the diced sweet potatoes to the skillet. Stir to combine with the turkey mixture. Cook for 5 minutes, stirring occasionally, until the sweet potatoes begin to soften slightly.
Stir in the taco seasoning, black beans, corn, and water. Bring the mixture to a simmer.
Reduce the heat to medium-low, cover the skillet, and cook for 8 to 10 minutes, or until the sweet potatoes are tender when pierced with a fork. Stir halfway through cooking.
Remove the lid. Sprinkle the cheese evenly over the top of the skillet mixture. Cover again and cook for 2 to 3 minutes, or until the cheese is fully melted and gooey.
Remove from heat. Serve the easy one pan dinner directly from the skillet.
Notes
For a richer flavor, use ground beef instead of ground turkey.
If you prefer a spicier dish, add 1/4 teaspoon of cayenne pepper with the taco seasoning.
