Make this incredibly gooey, cheesy Texas Trash Dip for your next gathering. This easy Tex-Mex appetizer uses simple ingredients like refried beans, cream cheese, and taco seasoning, ensuring it becomes a party favorite that disappears fast.

  • 1 can (16 ounces) refried beans
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 packet (1 ounce) taco seasoning, divided
  • 1 can (10 ounces) diced tomatoes and green chilies (like Ro-Tel), drained
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 pound ground beef (optional, for meaty version)
  • 1/2 teaspoon garlic powder

Instructions

  1. If using ground beef, cook the beef in a skillet over medium heat until browned. Drain off any excess fat. Stir in half of the taco seasoning and the garlic powder. Set aside.
  2. In a medium bowl, combine the softened cream cheese, sour cream, and the remaining half of the taco seasoning until smooth.
  3. To assemble the dip for baking, spread the refried beans evenly in the bottom of a 9-inch pie plate or small oven-safe dish.
  4. If you are making the meaty version, spread the cooked, seasoned ground beef evenly over the bean layer.
  5. Spread the cream cheese mixture over the beef layer or directly over the beans if omitting beef.
  6. Top the cream cheese layer with the drained diced tomatoes and green chilies.
  7. Sprinkle both the Monterey Jack and cheddar cheeses evenly over the top layer.
  8. Bake at 350 degrees Fahrenheit for 20 to 25 minutes, or until the dip is hot throughout and the cheese is melted and bubbly.
  9. Serve this warm cheese dip immediately with tortilla chips or crackers.

Notes

  • For a slow cooker variation, layer all ingredients in a small (1.5 to 2-quart) slow cooker. Cook on low for 2 to 3 hours or on high for 1 to 1.5 hours, until heated through.
  • You can prepare the dip layers (excluding the top cheese layer) in advance and store it covered in the refrigerator for up to 24 hours. Add the cheese and bake when ready to serve.
  • Use your favorite brand of taco seasoning for the best flavor in this bold cheesy dip.
